Sauvignon

  • Production area: Veneto, vineyards in Pradamano Udine.
  • Denomination: Tre Venezie I.G.T.
  • Vinification: the grapes are set in stainless steel vats at a controlled temperature of 65°F for 12-36 hours in order to extract from the skins the largest quantity of components typical of the aroma. After separating must and skins, the fermentation with selected yeasts follows at a temperature of 64°F for circa 15 days. The wine is then set to refine for some months in stainless vats, before release.
  • Color: straw yellow, with light greenish reflexes
  • Nose: dry, soft and harmonic, refreshing and zesty taste with notes of citrus fruits such as grapefruit, lemon, and lime.
  • Taste: crisp and refreshing wine with citrus and herbaceous flavors.
  • Food pairings: light appetizers, light soups, risottos, seafood soups and dishes. Very good with dried salted cod according to the recipe of Vicenza.
  • Conservation: to be kept dark places at a temperature of 54-61 °F, avoid to keep it long time in refrigerator.
  • Alcohol Content: 12-2.5 % by vol.
  • Serving temperature: 50-54 °F.
  • Residual sugar: 4 gr. lt.
  • Acidity: 5.5 gr. lt.
