Passone Puglia
- Production Region: Puglia
- Grape varieties: lightly dried Primitivo a touch of Negramaro.
- Harvest: a technique called “Il Giro del Picciolo” is used on about 50% of the grapes. This method consists in “choking” the stalk so that no further nourishment reaches the grapes, thus inducing a natural withering of the fruit on the vine. The grapes are left on the plant for about 12 days and lose about 25-30% of their weight, thus concentrating their aromas and fragrances.
- Vinification: maceration at controlled temperature (71-75°F) with frequent stirring to guarantee the correct extraction of the color and aromas.
- Aging: 6 months, in stainless steel vats and french oak barrels.
- Color: Dark ruby red with purple hues.
- Nose: flavors of blueberry, black currant, woodsy, aromatic herbs and rhubarb, with sweeter and spicy nuances of vanilla, cloves and star anise and a slightly pungent streak of cinnamon.
- Taste: Powerful, perception of black cherry jam, it has a powerful structure that is characterized by freshness and flavor. Tannin in plain sight but modulated is the setting for a very pleasant and long-lasting taste.
- Food pairing; red/white meats, game, roasted lamb, eggplant parmesan, and hearty lentil stews, Barbecue, pizza, old cheese and typical dishes of the Apulian tradition.
