Kottabos

A challenge in the mountains, among untouched forests and a generous nature, in the middle of a valley of stones, bone, skeleton; the fruit is very fine pulp, which in the bottle becomes the exact representation of the scents of red fruits, notes of cocoa, kottabos is so called in honour of the symposium, the ritual banquet loved by the Samnites, kottabos were the cups used for drinking.

  • Vinification: alcoholic fermentation and maceration in stainless steel at controlled temperature for fifteen days, elevage in French oak barriques for 5-6 months.

  • Nose: The nose is filled with elegant aromas of plum, blackberry, and chocolate, accompanied by notes of Mediterranean spices, licorice, vanilla, tobacco, and balsamic hints spicy finish of pepper and cinnamon.
  • Taste: round and harmonious, Intense and pleasant bouquet, aroma of red fruits, ripe cherries, notes of cocoa and a smooth, velvety texture.
  • Food pairings: great for steaks, grilled red meats, lamb and venison. Its rich fruit flavors and robust tannins make it a perfect pairing for these hearty dishes.
