Gigino Grande
- Production area: Tuscany
- Grapes: Sangiovese, Merlot, Cabernet-Sauvignon.
- Denomination: Toscana I.G.T.
- Vinification: the grapes are vinified in separate tanks, the Sangiovese is subjected to a light drying for about 20 days. Pre-fermentation and cold maceration at 39 °F to guarantee a better extraction of the color as well as a greater concentration of the fruity and aromas. The vinification then proceeds at a controlled temperature, never higher than 77 °F, in order to guarantee a gradual and harmonious development of the wine.
- Aging: 50% is aged in American barriques while the other 50% in French oak barriques for a period of one year.
- Color: deep amaranth red, dense and impenetrable
- Bouquet: intense, fruity with ripe red fruits, such as black cherry and currant jam, and vanilla and caramel.
- Nose: strong and structured, elegant, mitigated by soft and well integrated tannins. Full-bodied and persistent finish with hints of dried fruit, bitter chocolate and Arabica coffee.
- Food pairings: It goes well with first courses based on mushrooms or truffles, important courses with strong tastes: scaloppine, stews and long-aged cheeses. Also worth trying as a meditation wine to be enjoyed in company.
