Cabernet Cicogna

- Harvest: Manual harvest in crates on the first week of October.
- Vinification: The bunches are totally de-stemmed and the grapes fermented in temperature controlled stainless steel vats, at 75° F for 14 days.
- Aging: The wine is aged in French oak barriques for 12 months and then refines for a further 6 months in glass lined concrete vats before bottling.
- Color: Deep ruby red.
- Nose: This is a savory and spicy red showing cloves, sun-dried tomatoes, dried roses and currants on the nose. black cherry, plum, green bell pepper, cloves, leather, sweet spices.
- Taste: The palate is dry, intense, with a long finish of black fruits. Alcohol is well integrated with the fruit concentration, balanced with the firm and developed tannins and the finish is really pleasant. The freshness, typical of the variety, supports the sip making it very intriguing.Chewy and juicy, medium- to full-bodied, with firm yet nicely polished tannins.
