Orange Catarratto

  • Vinification: Harvested by hand, the yields are naturally restricted by the winds and climatic conditions on the island and average around 7200 pounds per hectare. The vineyard is 1150 -1450 feet ABSL, ensuring cooler night time temperatures that preserve crucial acidity in the grapes; the harvest tend to be as early as possible giving the wine brightness and freshness with clean fruit flavors, the grapes are first very gently pressed and fermented in 130 Gallons acacia wood barrels for 24 hours using natural yeast, resulting in a complex and textured wine. After maceration and second soft pressing of the grapes/must a second fermentation will start in stainless steel vats at 60-68°F for 14 days, followed by malolactic fermentation. The grapes are left on the skin for 5 days, which adds to the wine’s orange hue and flavor profile. The winemaking process is minimal, with no fining or filtering, and only a small amount of sulfur added.
  • Nose: nice round orchard fruit flavor with candied orange notes.
  • Taste: on the palate it is tasty, aromatic with a long and persistent finish.
  • Food pairing: Ideal with first dishes with meat ragout, very good with roast beef or grilled meat, excellent with aged and soft cheese.
