Da Uve Leggermente Appassite

  • Production area: Tuscany
  • Grapes: Sangiovese, Merlot.
  • Harvest: Merlot in early September, Sangiovese in mid-September.
  • Vinification: Grapes are harvested when they reach 80% of the optimal state of ripeness, and then let them dry up to a loss of 30% of their weight, this process takes about 2/3 weeks and takes place on boxes at a temperature that is around 60.8 °F. The must obtained from the pressing of the grapes is subjected to fermentation at a temperature between 54-58 °F, which gives the finished wine both extreme elegance despite the organoleptic characteristics of the dried grapes, as well as a great structure.
  • Aging: passage in stainless steel only before bottling
  • Color: pale pink.
  • Bouquet: mediterranean scrub, rose and pomegranate.
  • Nose: fresh, balanced and with good structure, ripe fruit, plum and morello cherry.
  • Food pairings: seafood appetizers, vegetable-based first courses, sushi, meat and tuna carpaccio, fresh cheeses.
  • Serving temperature: 53-58° F.
