Grapes: Sangiovese, Canaiolo, Ciliegiolo
Vinification: Fermentation at 81º F for 8-10 days in stainless steel vats. Post fermentation, maceration lasting 4-6 days; malolactic fermentation in stainless steel vats.
Aging: Six months in stainless steel vats,and a further six months in bottle.
Alcohol content: 13%
Color: Nice soft garnet red, violet tones.
Nose: Fruity, fresh, plums and wild flowers.
Taste: Full, harmonious, persistent, notes of white fruits, cherry and tobacco.
Food pairing: Cold cuts, meat sauce pasta,red meats, pork, chicken cacciatore and medium aged cheeses
