Grapes: 100% Sangiovese
Vinification method: Governo is made according to the ancient Tuscan tradition of the “governo Toscano” where selected and slightly dried grapes are added to already fermented wine. This a second slow fermentation lasting 2-3 weeks.
Aging: Three months in new barriques barrels.
Alcohol content: 14.5% alcohol by volume
Color: A deep red, impenetrable to the eye.
Nose: On the nose hints of cherry, black cherry and very ripe red fruits complemented by spicy aromas.
Taste: The taste is full and delicate,the right compromise between softness and acidity.
Food paring: Game, red meats, seasoned cheeses, stews and earthy pasta dishes.
Serving Temperature: 64º-67º
